Escarole

Escarole is a member of the chickory family and is a bit bitter, so if you are cooking it, you want to cook it well to be sure the bitter taste is made more subtle.  You can use this in salad, uncooked, but if you dont like the bitter taste, you want to mix it with iceberg lettuce or some other type of lettuce.

For a delicious and quick 5 minute dish that can serve as an appetizer, you can heat some olive oil, garlic and shopped escarole leaves.  Season with salt and pepper, serve over a slice of Italian toast.
