The Food: Funghi Zuppa (Mushroom Soup)
INGREDIENTS
24 Mushrooms
Garlic
Oyster Mushrooms
White Onion
Butter
Extra Virgin Olive Oil
Salt & PepperTh
Corn, Zucchini & Pepper Soup.
Leek leeks, pancetta, heat olive oil, but not hot, add garlic, diced pancetta & sliced leeks, cook for 10 mins, add in diced zucchini, red or green peppers, corn, dry or fresh thyme, cook for another 5 mins, add rest of ingredients (cream, chicken stock,) bring to rolling boil for about 5 mins then reduce heat to simmer for 30 mins, serve with parsley and grated cheese
