Sausage with Stewed Tomatoes

INGREDIENTS
1 pound of Sweet Italian Sausage
Red Pepper Flakes
Salt & Pepper to Taste
1 White Onion, Sliced
1/2 Glass of White Wine
Fresh Parsely, Chopped
1 Red and/or Yellow Pepper, sliced in small thin pieces

This recipe is almost like a stew and is almost a familiar favorite.  If you wanted, you could even serve this on an Italian roll for lunch and/or at a backyard BBQ.   Of course, it can be served at dinnner as well, but its a great dish for lunch, dinner or BBQ.  

First off, cook your sausage in some olive oil.  Make sure it is cooked, but not over cooked, because we will put it back in the pan later.  Removed the cooked sausage from the pan, and allow to drain the grease on a plate of paper towels.  

In the pan with the olive oil the sausage was cooked in, add the red and/or yellow peppers, toss and allow to cook for about 5 minutes over medium-high heat.  Do not cook them all the way through, these too will be added to the pan again later.  But them in a bowl and set aside.  

Next add your sliced white onion, garlic sliced thick (in case people can pick it out later if they wish).  Add the red pepper flakes to taste, and toss the ingredients in the pan to mix.  Cook this over the same medium-high heat for no more than 10 minutes.  Add a half glass of white wine to deglaze the pan.  Toss again and stir.  

Add stewed Italian tomatoes but NOT the juices it was packed in if they are canned.  Allow this to cook for about 7 more minutes.  Next add in the cooked sausage, toss to miz well and then add the packing juices of the stewed tomatoes.  Allow to cook for a minute then add the peppers.  Bring the entire mixture to a boil, then reduce the heat and simmer for 15 minutes.  Garnish with fresh chopped parsley.
