The Food: Diver Scallops with
Asparagus
INGREDIENTS

Garlic
Extra Virgin Olive Oil
Salt & Pepper
Fresh Lemon
Butter
Scallops with asparagus is a
very simple, deliscious dish, easy to make and even considered an
aphrodisiac. It is perfect for a St. Valentine's Day Appetizer to share or
dinner.
There are a couple of ways to make this. You
can either blanch the asparagus in a pot of boiling water to soften them
up, and then put them in the same pan as the scallops; or put your olive
oil and crushed garlic cloves cast iron pan. Be sure to cook the asparagus
on all sides. When they are just about done, lightly score your scallops
on one side, criss-cross them with a sharp knife. Salt and pepper them
to taste on the scored side and place them into the pan scored side down.
Cook them more than halfway through, then with a spoon gently scoop
them (in case they stick to the pan) and put them on their other sides.
When you do this take a drop of butter and put it on each scallop.
To finish the dish, add a good squeeze of fresh lemon over the scallops
and aspargus and serve. You can also try a few drops of good balsamic
vinegar over the asparagus.
