Tomato with Sausage Sauce

INGREDIENTS: (About 2-3 Servings)
Olive Oil
3 garlic cloves, chopped into large pieces
1/2 white onion, chopped
1/4 cup white wine
1/4 cup chopped sage
Red Pepper Flakes, Salt & Pepper to taste
Serve with Penne Rigate pasta

This sauce is similar to the meat ragu (the real ragu not the bottled stuff).  The difference is that the sausage gives the sauce a different flavor.  You can use any kind of sausage you with, Italian sweet or hot, whichever you prefer.

In a sauce pan over medium heat the olive oil and add in the garlic for a minute or so then add in the chopped onions.  In a separate pan remove the sausage from the casings and brown it for about 10 minutes.   In the pan with the garlic and onions, add in a few red pepper flakes to taste.  Add the chopped sage and add in white wine.  Let deglaze and add in tomatoes sauce.  Let boil, then reduce heat to simmer for about 25-30 minutes until the sauce is thick.  

In at least 5 quarts of boiling water, cook the penne pasta until just al dente.  Add it into the sauce and cook for about a minute more and serve with the parmesean cheese on the side separately so you or your guests can add the cheese to taste.
