INGREDIENTS
Flounder, Sole or any other flat, white fish
1/4 White Onion, Diced
1 Fresh Lemon (Optional)
Red Wine Vinegar
Sea Salt & Pepper to Taste
Red Wine Vinegar
Extra Virgin Olive Oil

Cuisine up in the northern
parts of Italy is not your typical pasta and sauce type deal. In fact,
even a thousand years ago, especially in the region of Venice, cooking had
a more worldly flavor due to the fact that ships were always coming in and
going back out, bringing to and from it, spices from around the world.
This here is not a typical dish, but a delicious one.
In a pan, heat your olive oil and add your diced
white or red onion (they use either). Season with salt and pepper,
and add a glass of red wine vinegar. Next add in your sugar, if you
like sweet, put more in, if not, a couple of tablespoons will do. Bring
to a boil, reduce the heat. Salt and pepper your piece of fish, lightly
coat in flour. Add it to your pan and cook for 3-4 minutes on each
side (depending on its thickness). Serve with lemon wedges if
desired.
